PENNSYLVANIA DUTCH

If you have browsed through my site, you know that I am of Pennsylvania Dutch origin. Most of the cookbooks I have seen contain recipes as they were recorded many years ago. Pa Dutch cooks seldom measured except in baking, and those measurements are estimates. For example, you will often see reference to "butter the size of an walnut" or "a coffee cup full of flour". Luckily, somewhere in my ancestry, perhaps my grandmother, someone translated some of the old into terms we can understand. But my mother and I had to remake many of the recipes on my site to record the measurements before posting. In any case, the books are very interesting from a historical point of view and the instinctive cook will understand the directions. Two of the books listed below are in my library and I have added comments. So have fun and explore. Don't forget to browse my Pennsylvania Dutch Recipes.

 

Pennsylvania Dutch Cook Book , by Justus George, Frederick

Paperback; Abbreviated edition; Published 1971

This is the best of the 2 books I have in that most of the recipes list ingredient amounts. There are many recipes with descriptions and historical prefaces. It is quite informative for those who want to learn more about PA Dutch cooking.


The Lancaster County Farm Cook Book (Pennsylvania Dutch Books)

This book is interesting for its historical accounts of recipes. There are few measurements but lots of information and numerous black and white photos.
